Mary's Potato Salad Recipe

Mary S.'s husband Lewis just came back from a trip to Argentina. His sciactica really gets bad in the wintertime, so he jets off to sunnier locations for about a month every year. Mary usually stays home with the kids.

This time when he came back he seemed like a new man, Mary told me. They're taking salsa lessons down at the YMCA; he's joined a raquetball team; and he's picked up cooking again. Mary says a prayer every night thanking God for this change in her husband, and she also prays he doesn't burn down THIS house, like he accidently did with their LAST house. It was a blessing really, Mary said in her testimony, which means I am free to share it on our site.

This home was their dream home. Mary says she's grateful she doesn't have to clean all 14,000 square feet of that place, but inwardly I know she's sad she no longer gets to walk across her marbled entryway or grab a pair of Minolo Blaniks from her custom-made live-in closet.

With the economy taking a dip the way it has, Lewis' contracting jobs have dried up almost as much as the saltimbocca he was cooking when he accidently left the stove on when he rushed out the door to help one of his home teaching families who was in need of a blessing. The true blessing was no one got hurt. And Brother Mathis, the family who Lewis' ran out to help, has made a complete recovery of his three broken ribs he sustained while at work. Though the fire destroyed everything, Mary says her family are survivors and they'll be just fine. Luckily, they were staying at her mother-in-law's house in Hoboken for the weekend. And most of their stuff hadn't been moved into the house yet, as it was still in a storage unit. Little miracles.

At any rate, Lewis has been making Argentine Potato Salad for Mary three times a week, and she wanted me to share the recipe with you sisters. She says it is so good you'll give up your Diet Coke for it.
  1. Take six potatoes, peel them, then take about three carrots and peel them. Boil them both in salt water until al dente.
  2. Drain the potatoes and carrots, and add a half cup of mayonnaise. Squeeze half a lemon into the carrots, potatoes, and mayonnaise mixture.
  3. Stir to combine and serve.
